deflated...

so i'm extremely deflated. i contacted the alberta food regulations people when i first started this to make sure that it was possible. not to long after i received a document from them stating the rules that i have abide by. i read the 19 pages thoroughly and didn't see anything that would prohibit me from opening shop so to speak. so today, i decide to call the guy just to touch base and confirm that it was, in fact was good to go. he informed that to be able to do things by the book i have to have a separate kitchen (oven, sink, workspace) from the one that is already in my house. i was confused cause nowhere did i see anything like that in the document that he forwarded me. i said this to him and he replied, "oh, well that part isn't in it"!!! i've spent the last while trying to figure everything out, talking to possible costumers, finding suppliers and i am ready to move to the next step and i am told that its a no go.

i am very unhappy. to say least. i've been SO excited about this. but i really don't know what to do, there has to be a way around it somehow, a loop hole of some sort, but where.

so that it what i will work on now...

can't go through it, can't go over it, can't go under it, i'll have to go around it.

oh my darling dark rye

so i made my rye yesterday and its really good i think. i'm impressed with it. i haven't made rye or eaten a dark rye in so long that i'm not really sure what to expect from it. its not as elastic as other breads and didn't take flour as easily either, but it has a really good flavor. i'm going to give the one loaf to my friend at work and see what she thinks. travis really like it, he ate about three slices last night while it was warm with molasses drizzled on it. i really enjoyed it with the buckwheat honey...

i printed out my 19 pages of food regulations yesterday and never read them....so today is the day! i'm going to make a cup of tea and and sit down and read until i'm done. i work at 2 today, so i want to have it read and call the guy to discuss it before i leave (among other things of course!)

the first step!!!

so this is it guess...i have thought of opening my own bakery for sometime, now i really am and its super exciting!! (as well as down right scary) i have lots to do still, i haven't found a supplier for organic flour yet...but that's in the works...

i'm still working full time while trying to get the bakery on its feet, which makes things interesting. i'm hoping get lots done today...the flour question as well as the health standards thing worked out. i have a 19 page document to read though, and i think that that along with a nice cup of tea is in order rather soon.

i've got rye bread rising at the moment. i haven't made rye....in...a long time, so i'm excited!! i work with a lady who its really fond of a nice dark rye so i'm going to be taking a loaf up to her tomorrow.

ahh!! i'm just really excited!!! and scared! and i really hope that i can make this work!
